It’s always exciting to receive another shipment from Sébastien Châtillon of Ad Vinum.
The majority of these wines come from last year’s harvest, the first in which Seb was able to pick all of the grapes from his own vineyards in the garrigue above Vallabrix in the Gard, resulting in greater cohesion between the wines. Seb’s creative winemaking has once again produced the kind of bright, vibrant wines for which he has become well known.
