Our tasting in Thierry’s caves, hidden away amongst forest outside Chahaignes was a real highlight of our trip to the Loire back in February and it is a pleasure to share some of our favourite wines from that day.
The wines he crafts from two and half hectares of old vines spread out in tiny parcels across the Sarthe and further afield in his native Touraine taste like no other. In the cave, he works à l’ancienne–without the use of electricity, pumps or running water, relying on a deft hand and a proper élevage to produce achingly pure wines which are built for the long haul.
Tasting older vintages whilst visiting Thierry has always been a real treat, and on this visit we enjoyed a bottle of Fosse Vineuse from the 2014 vintage. Full of verve, it was staggeringly fresh despite a decade of age and a gentle reminder that these are wines that truly reward those who wait.
