This pet nat is mostly made from an assemblage of Chardonnay and Molette from Bugey, with a little Muscat from the Pyrénées and Sylvaner from Alsace. The wine began life in cuve, before finishing fermentation in the bottle and was disgorged in January of this year. This impresses with gentle scents of citrus and flowers and a clean salty finish.
