This lesser-known collaboration with Cantina Giardino sees a three year old lambic infused with three hundred grams per litre of Greco grapes. A young lambic is added to cause a second fermentation in the bottle, producing a hazy, lively beer which wows with complex notes of herbs and brine. Thrillingly unique.
