Just the third white that Eloi has released from Mallorca, this is made from Malvasia Banyalbufar grown in his friend Cati Ribot’s Son Llebre vineyard in Santa Margalida. The grapes were fermented as whole bunches for ten days, before being pressed to vats for just under a year. The result is a lively, sunkissed amber wine perfumed with citrus, salt and flowers, that makes us wonder why Eloi doesn’t do this more often.
