A blend of roughly equal parts of Savagnin and Chardonnay, crushed gently by foot, left overnight and then pressed with an old basket press to barrel for a year of élevage. Pale straw yellow in the glass, the nose is delicate and nuanced, with citrus, stones and spice sharing centre stage. Compact and elegant, the palate is marked by an intense, stony minerality and a long, salty finish. This blossoms beautifully with air and will reward drinkers for years to come.
