Halará Rosso

This is made entirely of the rare Parpato grape. From a parcel of thirty five year old, north facing vines planted over calcareous soils, it is a mix of destemmed grapes which ferment on the skins for a month and whole bunches that macerate a couple of weeks. While light on its feet, it feels quintessentially Mediterranean with its black fruits, herbs, brine and spice.
