La Bueilloise


A blend of Chenin and Pineau d’Aunis from vines up to 100 years old. This began its life in cuve, before being transferred to bottle to finish fermentation. There it spent fifteen months on its lees, before being disgorged by hand. This has a incredible energy and persistent acidity, a taut, linear pet nat that is one hell of an apéritif.
