A delicious pétillant from one of the masters of the genre, this comes from young vines of Chardonnay planted over clay and limestone in Jérome’s Bouchat parcel. Pressed directly, the wine begins fermentation in cuve, before being transferred to bottle, where it spent eighteen months on lees before disgorgement. A cooler vintage has produced a pale, straw coloured wine that impresses with delicate notes of stone fruits and flowers, whilst the palate is whistle clean, with fine bubbles and a distinct mineral imprint from this fantastic terroir.
