From Jérôme’s youngest parcel of Chardonnay planted over clay and limestone, this is one of the most impressive pet nats we have tried. It begins fermentation in cuve, before being transferred to bottle, where it spends eighteen months on lees before disgorgement by hand. This is full of charm, offering stone fruits, fine bubbles and wonderful refreshment.
