From Nino’s youngest vines of Nero d’Avola planted over sandy soils. Like the Vignammare, the grapes are picked early, in the middle of August, meaning the acid is tart and alcohol low. It spends just a night on its skins, ferments in stainless steel vats and rests in concrete until April, before being bottled without so2. This is a wonderful Rosammare and with just a wisp of tannins amongst its bright, crunchy fruit and at just 10.5% of alcohol, it screams for a plate of anchovies or some grilled sardines.
