From Nino’s youngest vines of Nero d’Avola planted over sandy soils. The grapes are picked early, in the middle of August, meaning the acid is tart and the potential alcohol low. The wine spends just a night on its skins before being pressed off to stainless steel vats. It is bottled young and unfiltered, with no additions. A brisk, saline rosato that is perfect with a plate of fried anchovies or squid.
