Carso, Friuli Venezia Giulia



Vitovska is a grape that seems to give an almost literal translation of the Carso, this limestone plateau just a few kilometres from the Adriatic which is one of Italy’s great terroirs. This comes from vines up to fifty year old across several remote parcels tucked away in the woods. It is fermented on skins in open top vats for three weeks with no pigeage, before spending two years in old wood. A wine that shimmers with minerals, as if it were chiseled out of the rock below. A drink with a remarkable sense of place.
