Gamay d’Auvergne from old vineyards planted over clay and basalt in and around Saint-Maurice. The grapes fermented as whole bunches for a fortnight, before being pressed to old barrels for a year of elévage. From a cooler vintage, this is pale in colour and remarkably light on its feet, though despite being almost weightless on the palate, it offers layers of intrigue.
