Procanico from old vines planted over loam at Ajola, fermented on the skins for around a fortnight and aged in terracotta amphorae for eight months. A rusty, sunset hue, this is heady with baked orange, earth and spice, with the kind of depth and texture so suited to the region’s rustic dishes.
