A wine that occupies that beautiful space between rosé and red, this comes from a direct press of Auxerrois from forty year old vines planted over clay, in which the skins of Pinot Noir are infused for a fortnight before pressing off to vat for a short rest. In both colour and scent, this reminds us a lot of a great Poulsard, it its ability to offer complexity whilst remaining so light on its feet.
