This beautiful pétillant naturel comes from several parcels of Gamay d’Auvergne in Saint-Maurice planted over clay and basalt. Pressed directly to cuve, the wine finished fermentation in bottle, spent a year sur lattes and was disgorged in January 2023. The palest shade of pink in the glass, this is delicate, dry and whistle clean, the neat bubbles carry delicate notes of red berries and minerals, making for a wonderfully complex aperitif.
