Fiano from ninety year old vines planted some five hundred metres above sea level in their Gaia vineyard. These grapes were harvested a little earlier than for that cuvée, fermented on the skins for two days, then pressed to sandstone amphorae until spring. A vibrant wine perfumed with stone fruits, chalk and flowers, as the name suggests, this goes down easy, but offers subtle complexity too.
