A belnd of Sylvaner, Auxerrois and Riesling from sixty year old vines planted over volcanic sandstone. The Riesling was pressed directly, whilst the other grapes were destemmed and macerated for six days, before being pressed and assembled for a year of élevage in vats and old barriques. Compact and elegant, there is a wonderful density to the fruit here, which is bound by layers of citrus and stones and leads to a long, salty finish.
