Mostly Sylvaner from sixty year old vines planted over volcanic sandstone, along with some Auxerrois and Riesling. The grapes were pressed directly, before a year of élevage in a combination of vats and old barriques. Compact and elegant, there is a wonderful density to the fruit here, which is bound by layers of citrus and stones and leads to a long, salty finish.
