This wonderfully vibrant pétillant is made up entirely of Cabernet Franc from a twenty year old parcel planted over clay and limestone. The grapes were fermented for a week as whole bunches, before being pressed and moved to bottle to finish fermentation. The resulting wine is fruity and full, offering an explosion of red berries, citrus and spice, lending it a somewhat festive feel. The kind of uplifting, joyful sparkling wine that makes as much sense at the beginning or end of a meal.
