A highly original take on Sauvignon Blanc from a small parcel of thirty year old vines where the soils are a little deeper than is the norm here. The grapes were destemmed by hand and placed into terracotta amphorae to macerate for up to six months, pressed and returned to the vessels for a further six months of rest. A hazy shade of gold, this is perfumed with ripe, exotic fruits, whilst fine tannins frame refreshing flavours of salt, pith and brine. A truly uplifting wine.
