A highly original take on Sauvignon Blanc from a small parcel of thirty year old vines where the soils are a little deeper than is the norm here. The grapes were de-stemmed by hand and placed into terracotta amphorae to macerate for up to six months, pressed and returned to the vessels for a further six months of rest. A hazy shade of gold, this is perfumed with ripe, exotic fruits, whilst fine tannins frame refreshing flavours of salt, pith and brine. A truly uplifting wine.
