A maceration of Sauvignon Blanc, Pinot Gris, Chardonnay and Savagnin. The Sauvignon is harvested first and macerated as whole bunches for around five days before being pressed to vats. Next the Gris is destemmed by hand and dropped into the fermenting juice for ten days and finally the pressings of Chardonnay and Savagnin from Geoponika are added to the mix. A gorgeous shade of peach, gentle scents of orange blossom draw you in, whilst neat tannins frame refreshing notes of mandarin. Achingly pure, this is some of their best work to date.
