From old bush vines, this lively field blend is a tribute to the wines made by Tinos’s farmers of old. Roughly half Rozaki, the balance is made up of Aspro and Mavro Potamisi. The three varieties are harvested together, crushed by foot, pressed slowly and aged until the following summer in vats. This really captures the wildness of the island. Heady with quince, wild flowers and spice, the palate is textured and very much alive, with salt and gritty minerals combining to great effect.
